Whilst studying at the college on the Photography Foundation Degree I availed myself of the facilities at Y Nant restaurant, and often booked a table with numerous groups of friends to enjoy the 3 course dining experience on offer.
During these occasions I spoke frequently with Kirsty, the Tutor, who was responsible for suggesting one of the courses on offer in their department. Again, I did not want my journey to stop and that’s when the inimitable Ian Presgrave was introduced to me. In all my years I had never cooked or presented food to the standards that I was seeing before me in Y Nant restaurant. The authenticity and trustworthiness of the final outcomes is truly impressive. Y Nant presents an innovative experience behind the scenes as well as a gastronomic indulgence in front of house which confidently deserves its 5 star rating on Trip Advisor.
The design process between conception and final product is truly awesome. So my biggest challenge so far was undertaken in the Patisserie department with Ian Presgrave. I was thrilled to learn and acquire so many skills and the confidence to undertake providing all the desserts for 22 members of my family every Xmas, birthdays and special occasions.
Fired up now with so many opportunities and experiences I have embarked on my last and probably most challenging course to date with Tutor Mark James in the Professional Cookery kitchen. Being a life-long vegetarian I have never wanted to touch, never mind eat both meat and fish, and to date all my fears have been allayed. Mark has sympathetically, and with humour, introduced me to preparing different meat and fish dishes and with all the skills that they entail. The transformation to end product is inspirational, well crafted and beautifully designed. I feel humbled to have participated and attained so many skills and knowledge-based acquisitions to date, with all thanks to excellent tutelage.
I have thoroughly enjoyed being part of the family that Coleg y Cymoedd fosters with each and everyone of its students. The groups I’ve encountered over the last 6 years have both welcomed me whole-heartedly and have created a community of like-mindedness and passion. I have embraced their friendship and respected that anything is possible when you have the right people to support you. Because of my time at Coleg y Cymoedd, and the tutors that have helped me along the way I now laugh a lot harder, cry a lot less and smile a whole lot more. Thank you all for so many opportunities that have enriched my life.
