For us, sustainability isn’t just something we talk about – it’s something we grow, cook, taste and learn from.
This term, our Level 1 Catering learners from our Ystrad Mynach campus have been taking sustainability to the heart of their curriculum by harvesting fresh produce from the college’s Green Zone.
From hand-picked tomatoes transformed into homemade soup, to edible flowers used to garnish dishes in our Scholars Restaurant, learners are gaining valuable experience in ingredient sourcing, food preparation and zero-waste thinking.
The initiative is already making a difference. Not only are learners seeing the journey from garden to plate first-hand, but the produce they collect is being used directly in assessments and menu dishes – at no extra cost to the college.
Plans are now developing to grow further, including the potential planting of damson trees to support menu items such as Damson Bakewell.

With teams across campus embracing sustainability as a lived practice, the Green Zone is fast becoming a hub of creativity, collaboration and responsible learning. This work reflects our commitment to preparing learners for industry through real experiences that benefit both people and the environment.
